  • 2 cups diced carrots
  • 2 cups diced potatoes
  • 1 cup diced bell peppers
  • 1 cup diced zucchini
  • 2 tablespoons olive oil
  • to taste Salt

Instructions 

  1. Heat olive oil in a large pan over medium heat.
  2. Add diced carrots and potatoes. Cook for 10 minutes, stirring occasionally.
  3. Add bell peppers and zucchini. Cook for another 10 minutes until all vegetables are tender.
  4. Season with salt and pepper to taste.
