Instructions
1. Cook the sushi rice according to package instructions.
2. Mix rice vinegar, sugar, and salt into the cooked rice.
3. Place a nori sheet on the bamboo mat, shiny side down.
4. Spread an even layer of sushi rice over the nori.
5. Arrange avocado slices and cucumber julienne in a line along the bottom edge of the nori.
6. Roll the bamboo mat away from you, pressing gently to shape the roll.
7. Slice the roll into bite-sized pieces with a sharp knife.
8. Serve with soy sauce.
