Eggplant Parmesan Subs
A delicious vegan twist on the classic Eggplant Parmesan, served in a sub roll.

Main Ingredients
- 2 large eggplants sliced into rounds
- 1 cup breadcrumbs use vegan breadcrumbs
- 1 cup almond milk unsweetened
- 1 cup marinara sauce
- 4 sub rolls vegan
- 1 cup vegan mozzarella cheese shredded
Preheat oven to 400°F (200°C).
Dip eggplant slices in almond milk, then coat with breadcrumbs.
Place coated eggplant slices on a baking sheet and bake for 20 minutes, flipping halfway through.
Warm marinara sauce in a saucepan over medium heat.
Assemble subs by placing baked eggplant slices in sub rolls, topping with marinara sauce and shredded vegan mozzarella.
Place assembled subs back in the oven for 10 minutes, until cheese is melted.
