A delicious vegan Egusi Soup recipe.

Main Ingredients
- 1 cup ground egusi seeds
- 0.5 cup palm oil
- 1 large onion, chopped
- 2 cups vegetable broth
- 2 cups chopped spinach
- 0.5 cup ground crayfish (optional)
- 1 teaspoon ground pepper
- to taste Salt
Heat palm oil in a pot over medium heat.
Add chopped onions and sauté until translucent.
Stir in ground egusi seeds and cook for a few minutes.
Add vegetable broth and bring to a boil.
Reduce heat and simmer for 20 minutes.
Add chopped spinach, ground crayfish (if using), ground pepper, and salt.
Simmer for another 10 minutes.
