  • 4 ears corn grilled and kernels removed
  • 1 cup cherry tomatoes halved
  • 1 avocado diced
  • ¼ cup red onion finely chopped
  • ¼ cup cilantro chopped
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions 

  1. 1. Grill the corn until slightly charred, then remove the kernels.
  2. 2. In a large mixing bowl, combine the grilled corn, cherry tomatoes, avocado, red onion, and cilantro.
  3. 3. Add the lime juice, chili powder, salt, and black pepper. Toss everything together gently.
