Ingredients 

Main Ingredients

  • 8 pieces Corn Tortillas
  • 2 cups Black Beans cooked
  • 1 cup Corn Kernels fresh or frozen
  • 1 cup Salsa
  • 1 cup Vegan Cheese shredded
  • 1 tablespoon Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine black beans, corn, salsa, cumin, chili powder, garlic powder, onion powder, salt, and pepper.
  3. Lightly grease a baking dish with olive oil.
  4. Fill each tortilla with the bean mixture and roll them up. Place them seam-side down in the baking dish.
  5. Top with vegan cheese.
  6. Bake for 25-30 minutes, until the cheese is melted and bubbly.
  7. Let cool for a few minutes before serving. Enjoy!
