Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 4 cloves Garlic, minced
  • 1 head Escarole, chopped
  • 2 cans Cannellini Beans, drained and rinsed
  • 4 cups Vegetable Broth
  • to taste Salt and Pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add minced garlic and sauté until fragrant, about 1-2 minutes.
  3. Add chopped escarole and cook until wilted, about 5 minutes.
  4. Stir in cannellini beans and vegetable broth. Bring to a boil.
  5. Reduce heat and simmer for 15 minutes. Season with salt and pepper to taste.
