Ethiopian Lentil Stew Recipe
A hearty and flavorful vegan stew made with lentils and Ethiopian spices.

Main Ingredients
- 1 cup lentils
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoon tomato paste
- 1 tablespoon berbere spice mix
- 4 cups vegetable broth
- to taste Salt
- 2 tablespoon olive oil
Heat olive oil in a pot over medium heat.
Add chopped onion, garlic, and ginger. Sauté until soft.
Stir in tomato paste and berbere spice mix. Cook for 2 minutes.
Add lentils and vegetable broth. Bring to a boil.
Reduce heat and simmer for 30-35 minutes, until lentils are tender.
Season with salt to taste.
