Ingredients

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 red onion, sliced
  • 2 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 0.5 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 small flour tortillas
  • 1 avocado, sliced
  • Fresh cilantro, chopped
  • Lime wedges

Instructions 

  1. Heat olive oil in a large pan over medium heat.
  2. Add sliced bell peppers and onion. Cook until softened, about 5-7 minutes.
  3. Add chili powder, cumin, paprika, garlic powder, salt, and pepper. Stir well.
  4. Cook for another 2-3 minutes until spices are well combined and vegetables are tender.
  5. Warm tortillas in a separate pan or microwave.
  6. Assemble tacos by placing cooked vegetables on tortillas.
  7. Top with avocado slices, fresh cilantro, and a squeeze of lime.
