Ingredients 

Falafel Ingredients

  • 1 cup Chickpeas canned or soaked overnight
  • 1 small Onion chopped
  • 2 cloves Garlic minced
  • 1 cup Fresh Parsley chopped
  • 2 tablespoon Flour
  • 1 teaspoon Cumin
  • 1 teaspoon Coriander
  • to taste Salt and Pepper
  • as needed Oil for frying

Pita and Toppings

  • 4 Pita Breads
  • 1 cup Lettuce shredded
  • 1 cup Tomatoes diced
  • ½ cup Cucumber sliced
  • ½ cup Tahini Sauce

Instructions 

  1. 1. In a food processor, combine chickpeas, onion, garlic, parsley, flour, cumin, coriander, salt, and pepper. Blend until smooth.
  2. 2. Form the mixture into small balls or patties.
  3. 3. Heat oil in a frying pan over medium heat. Fry the falafel until golden brown on all sides.
  4. 4. Warm the pita breads in a pan or oven.
  5. 5. Stuff the pita with falafel, lettuce, tomatoes, cucumber, and drizzle with tahini sauce.
