Ingredients 

Falafel

  • 1 can Chickpeas drained and rinsed
  • ½ cup Fresh Parsley chopped
  • ½ cup Fresh Cilantro chopped
  • ¼ cup Onion chopped
  • 3 cloves Garlic minced
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • ½ teaspoon Salt
  • ¼ teaspoon Baking Powder
  • 3 tablespoon All-Purpose Flour
  • ¼ cup Olive Oil for frying

Salad

  • 4 cups Mixed Greens
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber sliced
  • ¼ cup Red Onion thinly sliced
  • ¼ cup Olives sliced
  • ¼ cup Tahini Dressing

Instructions 

  1. 1. In a food processor, combine chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, salt, baking powder, and flour. Pulse until well combined but not pureed.
  2. 2. Form the mixture into small balls or patties.
  3. 3. Heat olive oil in a frying pan over medium heat. Fry the falafel until golden brown on all sides, about 3-4 minutes per side.
  4. 4. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and olives.
  5. 5. Top the salad with the cooked falafel and drizzle with tahini dressing. Serve immediately.
