Ingredients 

Main Ingredients

  • 2 cups Chopped Vegetables (carrots, bell peppers, zucchini)
  • 1 cup Quinoa
  • 2 cups Vegetable Broth
  • 1 can Chickpeas, drained and rinsed
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Garlic Powder

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add chopped vegetables and sauté until tender, about 5-7 minutes.
  3. 3. Add quinoa, vegetable broth, chickpeas, salt, pepper, and garlic powder. Stir to combine.
  4. 4. Bring to a boil, then reduce heat to low. Cover and simmer for 20 minutes or until quinoa is cooked.
  5. 5. Fluff quinoa with a fork and serve hot.
