Ingredients 

Main Ingredients

  • 2 cups Fava Beans fresh or frozen
  • 1 tablespoon Olive Oil
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 cup Vegetable Broth
  • to taste Salt and Pepper
  • 2 tablespoon Lemon Juice freshly squeezed
  • 1 tablespoon Fresh Parsley chopped

Instructions 

  1. 1. Heat the olive oil in a pan over medium heat.
  2. 2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. 3. Add the minced garlic, cumin, and paprika. Cook for another minute.
  4. 4. Add the fava beans and vegetable broth. Bring to a simmer and cook for 20 minutes.
  5. 5. Season with salt and pepper to taste.
  6. 6. Stir in the lemon juice and chopped parsley before serving.
