Feijoada Brazilian Black Bean Stew Recipe

Main Ingredients
- 2 cups black beans soaked overnight
- 1 large onion chopped
- 3 cloves garlic minced
- 1 large carrot chopped
- 1 large bell pepper chopped
- 1 can diced tomatoes 400g can
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 4 cups vegetable broth
- to taste salt and pepper
1. Heat a large pot over medium heat. Add the chopped onion and cook until translucent.
2. Add the minced garlic and cook for another minute.
3. Add the chopped carrot and bell pepper. Cook for about 5 minutes until they start to soften.
4. Stir in the smoked paprika, ground cumin, and dried oregano. Cook for another minute.
5. Add the soaked black beans, diced tomatoes, and vegetable broth. Bring to a boil.
6. Reduce the heat to low and let it simmer for about 45 minutes, or until the beans are tender.
7. Season with salt and pepper to taste. Serve hot.
