Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed
  • 2 cups Vegetable Broth
  • 1 cup Diced Tomatoes canned
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • to taste Salt and Pepper

Instructions 

  1. 1. In a saucepan, sauté the chopped onion and minced garlic until translucent.
  2. 2. Add the rinsed lentils, vegetable broth, and diced tomatoes to the saucepan.
  3. 3. Stir in the cumin and paprika. Season with salt and pepper to taste.
  4. 4. Bring to a boil, then reduce heat and let simmer for about 30 minutes, or until the lentils are tender.
  5. 5. Serve hot as a filling for tacos, burritos, or as a side dish.
