Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 3 Carrots, diced
  • 2 Celery Stalks, diced
  • 4 cups Vegetable Broth
  • 2 cups Potatoes, diced
  • 1 cup Corn Kernels
  • 1 cup Coconut Milk
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the diced onion and minced garlic, sauté until softened.
  3. 3. Add the diced carrots and celery, cook for another 5 minutes.
  4. 4. Pour in the vegetable broth and bring to a boil.
  5. 5. Add the diced potatoes and corn kernels, reduce heat and simmer for 15 minutes.
  6. 6. Stir in the coconut milk, dried thyme, salt, and black pepper. Simmer for another 5 minutes.
  7. 7. Serve hot and enjoy!
