Instructions
Rinse freekeh under cold water.
In a pot, combine freekeh and water. Bring to a boil, then reduce heat and simmer for 20 minutes.
Drain any excess water and let freekeh cool.
In a large bowl, combine cooked freekeh, pomegranate seeds, parsley, mint, and red onion.
In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
Pour dressing over salad and toss to combine.
