  • 2 tablespoon Olive Oil
  • 1 large Onion, chopped
  • 2 cloves Garlic, minced
  • 2 cups Tomatoes, diced
  • 1 cup Vegetable Broth
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. 1. Heat the olive oil in a saucepan over medium heat.
  2. 2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. 3. Stir in the minced garlic and cook for another minute.
  4. 4. Add the diced tomatoes and vegetable broth. Bring to a simmer.
  5. 5. Stir in the dried thyme, salt, and black pepper. Let it cook for 20 minutes.
  6. 6. Serve hot.
