  • 4 cups Onions, thinly sliced
  • 2 tablespoon Olive oil
  • 4 cups Vegetable broth
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Balsamic vinegar

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add the onions and cook until they are soft and caramelized, about 25 minutes.
  3. Add the vegetable broth, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Stir in the balsamic vinegar and adjust seasoning if needed.
  5. Serve hot.
