Main Ingredients
- 2 whole grain bagels
- 1 avocado, sliced
- 1 tomato, sliced
- 1 cucumber, sliced
- 0.25 red onion, thinly sliced
- 0.5 cup mixed greens
- Salt and pepper to taste
- Vegan cream cheese (optional)
Toast the bagels if desired.
Spread vegan cream cheese on each half of the bagels (optional).
Layer the avocado, tomato, cucumber, red onion, and mixed greens on the bottom half of each bagel.
Season with salt and pepper to taste.
Top with the other half of the bagel.
