Fruit and Nut Energy Bars

- 1 cup Dates pitted
- 1 cup Mixed Nuts unsalted
- ½ cup Dried Cranberries
- ¼ cup Maple Syrup
- 1 teaspoon Vanilla Extract
- ¼ teaspoon Salt
Line a baking dish with parchment paper.
In a food processor, blend dates until they form a sticky ball.
Add mixed nuts, dried cranberries, maple syrup, vanilla extract, and salt. Pulse until combined.
Press the mixture into the lined baking dish. Flatten with a spatula.
Refrigerate for at least 1 hour before cutting into bars.
