Main Ingredients

  • 2 lbs Russet Potatoes peeled and cubed
  • 4 cloves Garlic minced
  • ¼ cup Olive Oil
  • ¼ cup Unsweetened Almond Milk or any plant-based milk
  • 2 tablespoon Fresh Parsley chopped
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes.
  2. 2. Drain the potatoes and return them to the pot.
  3. 3. Add minced garlic, olive oil, and almond milk to the pot.
  4. 4. Mash the potatoes until smooth and creamy.
  5. 5. Stir in chopped parsley, salt, and black pepper to taste.
  6. 6. Serve hot and enjoy!
