  • 2 large sweet potatoes peeled and cut into fries
  • 2 tablespoon olive oil
  • 3 cloves garlic minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions 

  1. Preheat oven to 425°F (220°C).
  2. Peel and cut sweet potatoes into fries.
  3. In a bowl, mix olive oil, garlic, rosemary, thyme, oregano, salt, and pepper.
  4. Toss sweet potatoes in the mixture until well coated.
  5. Spread fries on a baking sheet in a single layer.
  6. Bake for 25 minutes, flipping halfway through, until crispy and golden.
