Ingredients 

Main Ingredients

  • 2 tablespoon Olive oil
  • 3 cloves Garlic minced
  • 1 cup Bell peppers sliced
  • 1 cup Zucchini diced
  • 1 cup Corn kernels fresh or frozen
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt to taste
  • 8 pieces Taco shells

Instructions 

  1. Heat olive oil in a skillet over medium heat.
  2. Add minced garlic and sauté for 1 minute.
  3. Add bell peppers, zucchini, and corn. Cook for 5-7 minutes until tender.
  4. Stir in cumin, paprika, and salt. Cook for another 2 minutes.
  5. Warm taco shells according to package instructions.
  6. Fill taco shells with the veggie mixture and serve.
