Gazpacho Recipe
A refreshing and chilled Spanish soup made with fresh vegetables.

Main Ingredients
- 6 cups ripe tomatoes, chopped
- 1 cup cucumber, peeled and chopped
- 1 cup green bell pepper, chopped
- ½ cup red onion, chopped
- 2 cloves garlic, minced
- 2 tablespoon red wine vinegar
- ¼ cup extra virgin olive oil
- 2 cups cold water
- to taste salt and pepper
1. Combine all chopped vegetables in a large bowl.
2. Transfer the vegetables to a blender and add garlic, vinegar, olive oil, and cold water.
3. Blend until smooth. Adjust seasoning with salt and pepper.
4. Chill in the refrigerator for at least 2 hours before serving.
5. Serve cold, garnished with extra chopped vegetables or herbs if desired.
