Ingredients 

Main Ingredients

  • 6 cups ripe tomatoes, chopped
  • 1 cup cucumber, peeled and chopped
  • 1 cup green bell pepper, chopped
  • ½ cup red onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoon red wine vinegar
  • ¼ cup extra virgin olive oil
  • 2 cups cold water
  • to taste salt and pepper

Instructions 

  1. 1. Combine all chopped vegetables in a large bowl.
  2. 2. Transfer the vegetables to a blender and add garlic, vinegar, olive oil, and cold water.
  3. 3. Blend until smooth. Adjust seasoning with salt and pepper.
  4. 4. Chill in the refrigerator for at least 2 hours before serving.
  5. 5. Serve cold, garnished with extra chopped vegetables or herbs if desired.
