Instructions
Soak beans overnight in water.
Drain and rinse beans.
In a large pot, heat olive oil over medium heat.
Add onion and garlic, sauté until soft.
Add beans, tomatoes, oregano, thyme, salt, pepper, and vegetable broth.
Bring to a boil, then reduce heat and simmer for 45 minutes or until beans are tender.
