Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon salt
  • ½ cup coconut oil, melted
  • ¾ cup brown sugar
  • ¼ cup molasses
  • ¼ cup almond milk
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In another bowl, mix the melted coconut oil, brown sugar, molasses, almond milk, and vanilla extract until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
  5. Roll the dough into balls and place them on the prepared baking sheet. Flatten each ball slightly with your hand.
  6. Bake for 10-12 minutes, or until the edges are set. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
