  • 2 cups flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon cinnamon
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon salt
  • 1 cup almond milk
  • 0.5 cup vegetable oil
  • 0.25 cup molasses
  • 1 teaspoon vanilla extract
  • 1 tablespoon apple cider vinegar
  • 2 cups vegan whipped cream
  • 0.5 cup crushed ginger snaps

Instructions 

  1. Preheat oven to 350°F (175°C). Grease a baking pan.
  2. In a bowl, mix flour, sugar, baking soda, ginger, cinnamon, cloves, and salt.
  3. In another bowl, combine almond milk, vegetable oil, molasses, vanilla extract, and apple cider vinegar.
  4. Mix wet ingredients into dry ingredients until well combined.
  5. Pour batter into the baking pan and bake for 30 minutes or until a toothpick comes out clean.
  6. Let the gingerbread cool, then cut into cubes.
  7. In a trifle dish, layer gingerbread cubes, vegan whipped cream, and crushed ginger snaps.
  8. Repeat layers until all ingredients are used up. Chill before serving.
