  • 2 cups Quinoa rinsed
  • 1 cup Chickpeas cooked
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber diced
  • 1 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper freshly ground

Instructions 

  1. 1. Cook the quinoa according to package instructions. Let it cool.
  2. 2. In a glass bowl, combine the cooked quinoa, chickpeas, cherry tomatoes, and cucumber.
  3. 3. Drizzle with olive oil and lemon juice. Season with salt and black pepper.
  4. 4. Toss everything together until well combined. Serve immediately or chill in the fridge for later.
