- 3 ripe bananas
- ¼ cup coconut oil, melted
- ½ cup maple syrup
- 1 teaspoon vanilla extract
- 1 ½ cups gluten-free flour blend
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup vegan chocolate chips
Preheat your oven to 350°F (175°C). Grease a loaf pan.
In a mixing bowl, mash the bananas until smooth. Stir in the melted coconut oil, maple syrup, and vanilla extract.
Add the gluten-free flour blend, baking soda, and salt. Mix until just combined.
Fold in the vegan chocolate chips.
Pour the batter into the prepared loaf pan. Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
