Crust
- 1 cup Almond Flour
- ¼ cup Coconut Oil melted
- 2 tablespoons Maple Syrup
Filling
- 1 cup Lemon Juice freshly squeezed
- ½ cup Coconut Milk full fat
- ½ cup Maple Syrup
- 2 tablespoons Cornstarch
- 1 tablespoon Lemon Zest
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine almond flour, melted coconut oil, and maple syrup. Mix well.
Press the mixture into a baking pan to form the crust. Bake for 10 minutes.
In another bowl, whisk together lemon juice, coconut milk, maple syrup, cornstarch, and lemon zest.
Pour the filling over the baked crust and bake for an additional 20 minutes.
Let it cool completely before cutting into bars. Enjoy!
