- 1 cup Gluten-free flour
- ½ cup Coconut sugar
- 1 teaspoon Baking powder
- ½ teaspoon Ground cinnamon
- ¼ teaspoon Salt
- ¼ cup Coconut oil, melted
- ¼ cup Maple syrup
- 1 teaspoon Vanilla extract
- 1 cup Apple, peeled and grated
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine the gluten-free flour, coconut sugar, baking powder, ground cinnamon, and salt.
Add the melted coconut oil, maple syrup, and vanilla extract to the dry ingredients. Mix until well combined.
Fold in the grated apple.
Scoop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 12-15 minutes, or until the edges are golden brown.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
