- 3 ripe bananas
- ¼ cup maple syrup
- ¼ cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1 ½ cups gluten-free flour blend
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon cinnamon
- ¼ cup almond milk
Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
In a large bowl, mash the bananas. Add maple syrup, coconut oil, and vanilla extract. Mix well.
In another bowl, whisk together the gluten-free flour, baking soda, salt, and cinnamon.
Add the dry ingredients to the wet ingredients. Mix until just combined.
Stir in the almond milk.
Divide the batter evenly among the muffin cups.
Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
