Ingredients 

Main Ingredients

  • 2 cups Carrots chopped
  • 2 cups Celery chopped
  • 1 cup Onion chopped
  • 4 cloves Garlic minced
  • 8 cups Water
  • 2 tablespoon Olive Oil
  • 2 teaspoon Salt
  • 1 teaspoon Pepper

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add carrots, celery, onion, and garlic. Cook until softened, about 10 minutes.
  3. 3. Add water, salt, and pepper. Bring to a boil.
  4. 4. Reduce heat and simmer for 50 minutes.
  5. 5. Strain the stock and discard the solids. Use immediately or store in the refrigerator.
