Ingredients 

Main Ingredients

  • 2 slices Whole grain bread
  • 1 cup Beetroot, cooked and sliced
  • ¼ cup Vegan goat cheese
  • 1 handful Arugula
  • 1 tablespoon Olive oil
  • 1 pinch Salt
  • 1 pinch Black pepper

Instructions 

  1. 1. Heat a pan over medium heat and add olive oil.
  2. 2. Add the beet slices to the pan and cook for about 5 minutes until slightly caramelized.
  3. 3. Toast the bread slices until golden brown.
  4. 4. Spread vegan goat cheese on one slice of bread.
  5. 5. Layer the cooked beets and arugula on top of the cheese.
  6. 6. Sprinkle with salt and black pepper.
  7. 7. Top with the second slice of bread, cut in half, and serve.
