  • 1 medium head cauliflower, riced
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1 teaspoon ground turmeric
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions 

  1. Rice the cauliflower by pulsing florets in a food processor until it resembles rice.
  2. Heat olive oil in a large pan over medium heat.
  3. Add onion and cook until translucent.
  4. Stir in bell pepper, zucchini, and cherry tomatoes. Cook for about 5 minutes.
  5. Add garlic and cook for another minute.
  6. Mix in the riced cauliflower and turmeric. Cook until the cauliflower is tender, about 5-7 minutes.
  7. Season with salt and pepper.
  8. Garnish with fresh parsley before serving.
