Instructions
Rice the cauliflower by pulsing florets in a food processor until it resembles rice.
Heat olive oil in a large pan over medium heat.
Add onion and cook until translucent.
Stir in bell pepper, zucchini, and cherry tomatoes. Cook for about 5 minutes.
Add garlic and cook for another minute.
Mix in the riced cauliflower and turmeric. Cook until the cauliflower is tender, about 5-7 minutes.
Season with salt and pepper.
Garnish with fresh parsley before serving.
