Ingredients 

Main Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • ¼ cup red onion, finely chopped
  • ¼ cup fresh cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions 

  1. Rinse quinoa under cold water.
  2. In a pot, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes.
  3. Fluff quinoa with a fork and let it cool.
  4. In a large bowl, combine quinoa, black beans, corn, avocado, cherry tomatoes, red onion, and cilantro.
  5. Drizzle with lime juice, season with salt and pepper, and toss to combine.
