Preheat your oven to 350°F (175°C).
Brush a baking dish with melted vegan butter.
Layer 8 sheets of phyllo dough in the dish, brushing each sheet with butter.
Sprinkle a thin layer of chopped nuts over the phyllo.
Repeat layering phyllo, butter, and nuts until all ingredients are used, ending with a top layer of phyllo sheets.
Cut the baklava into squares or diamonds before baking.
Bake for 45 minutes or until golden and crisp.
While baking, combine sugar, water, vanilla extract, maple syrup, and cinnamon in a saucepan. Bring to a boil, then simmer for 10 minutes.
Pour the syrup over the hot baklava as soon as it comes out of the oven.
Let it cool completely before serving.
