Greek Briam Recipe
A traditional Greek roasted vegetable dish that's vegan and bursting with flavor.

Main Ingredients
- 2 medium Zucchini sliced
- 2 medium Eggplants sliced
- 4 medium Potatoes peeled and sliced
- 1 large Onion sliced
- 4 cloves Garlic minced
- 4 medium Tomatoes sliced
- ½ cup Olive oil
- 1 teaspoon Salt
- ½ teaspoon Black pepper
- 1 teaspoon Dried oregano
Preheat your oven to 375°F (190°C).
In a large baking dish, combine all the sliced vegetables.
Drizzle with olive oil, and season with salt, pepper, and oregano. Toss to coat evenly.
Bake for about 60 minutes, stirring occasionally, until the vegetables are tender and slightly caramelized.
Serve hot or at room temperature.
