Ingredients 

Main Ingredients

  • 2 cups pasta (penne or rotini)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, thinly sliced
  • ¼ cup Kalamata olives, pitted and sliced
  • ¼ cup fresh parsley, chopped
  • ¼ cup olive oil
  • 2 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions 

  1. Cook pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine pasta, cherry tomatoes, cucumber, red onion, olives, and parsley.
  3. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Pour dressing over pasta salad and toss to coat.
  5. Chill in the refrigerator for at least 30 minutes before serving.
