  • 1 cup Tomatoes diced
  • 1 teaspoon Oregano dried
  • 1 cup Spinach fresh
  • 2 cloves Garlic minced
  • 1 cup Quinoa cooked

Instructions 

  1. 1. Heat olive oil in a saucepan over medium heat.
  2. 2. Add minced garlic and cook until fragrant.
  3. 3. Add diced tomatoes and cook for 5 minutes.
  4. 4. Stir in chickpeas, oregano, and spinach. Cook until spinach is wilted.
  5. 5. Serve over cooked quinoa.
