Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup red onion, thinly sliced
  • ½ cup kalamata olives, pitted
  • 1 cup vegan feta cheese, cubed
  • 2 tablespoon olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • to taste salt and pepper

Instructions 

  1. In a large mixing bowl, combine cherry tomatoes, cucumber, red onion, kalamata olives, and vegan feta cheese.
  2. Drizzle olive oil and red wine vinegar over the salad.
  3. Sprinkle dried oregano, salt, and pepper to taste.
  4. Toss everything together until well combined.
  5. Serve immediately or chill in the fridge for 30 minutes before serving.
