Instructions
Preheat oven to 375°F (190°C).
In a mixing bowl, combine quinoa, tomatoes, cucumbers, red onions, olives, parsley, olive oil, lemon juice, oregano, salt, and pepper.
Stuff the bell peppers with the quinoa mixture.
Place stuffed peppers in a baking dish and cover with foil.
Bake for 30-40 minutes, until peppers are tender.
Remove from oven and let cool slightly before serving.
