Ingredients 

Main Ingredients

  • 4 Bell Peppers tops cut off and seeds removed
  • 1 cup Cooked Quinoa
  • 1 cup Chopped Tomatoes
  • 1 cup Chopped Cucumbers
  • ½ cup Chopped Red Onions
  • ¼ cup Chopped Kalamata Olives
  • ¼ cup Chopped Fresh Parsley
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Dried Oregano
  • to taste Salt and Pepper

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine quinoa, tomatoes, cucumbers, red onions, olives, parsley, olive oil, lemon juice, oregano, salt, and pepper.
  3. Stuff the bell peppers with the quinoa mixture.
  4. Place stuffed peppers in a baking dish and cover with foil.
  5. Bake for 30-40 minutes, until peppers are tender.
  6. Remove from oven and let cool slightly before serving.
