Main Ingredients
- 2 tablespoon olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 cups diced tomatoes
- 1 cup vegetable broth
- 1 cup chickpeas, cooked
- 1 cup potatoes, diced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- to taste salt and pepper
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and cook until translucent, about 5 minutes.
3. Stir in minced garlic and cook for another minute.
4. Add diced tomatoes, vegetable broth, chickpeas, and potatoes. Bring to a boil.
5. Reduce heat to low, add oregano and thyme, and simmer for 30 minutes or until potatoes are tender.
6. Season with salt and pepper to taste. Serve hot.
