Ingredients 

Main Ingredients

  • 2 cups green beans, trimmed and cut into 1-inch pieces
  • 3 medium potatoes, peeled and diced
  • 1 cup corn kernels (fresh or frozen)
  • ¼ cup red onion, finely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions 

  1. Boil potatoes in salted water until tender, about 10 minutes. Drain and let cool.
  2. In another pot, blanch green beans for 3-4 minutes until tender-crisp. Drain and cool.
  3. If using frozen corn, cook according to package instructions. If using fresh, boil for 2-3 minutes.
  4. In a large mixing bowl, combine potatoes, green beans, corn, and red onion.
  5. Drizzle with olive oil and lemon juice. Season with salt and pepper.
  6. Toss everything together until well mixed. Serve chilled or at room temperature.
