Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • 1 zucchini, chopped
  • 1 cup green beans, chopped
  • 1 cup spinach
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Add carrots and celery, cook for 5 minutes.
  4. Add zucchini, green beans, and spinach, cook for another 5 minutes.
  5. Stir in diced tomatoes, vegetable broth, thyme, and oregano.
  6. Bring to a boil, then reduce heat and simmer for 20 minutes.
  7. Season with salt and pepper to taste.
