Salt and pepper to taste
Instructions
Heat olive oil in a large pot over medium heat.
Add onion and garlic, sauté until translucent.
Add carrots and celery, cook for 5 minutes.
Add zucchini, green beans, and spinach, cook for another 5 minutes.
Stir in diced tomatoes, vegetable broth, thyme, and oregano.
Bring to a boil, then reduce heat and simmer for 20 minutes.
Season with salt and pepper to taste.
