Ingredients 

Main Ingredients

  • 2 avocados halved and pitted
  • 1 cup cherry tomatoes halved
  • 1 red onion thinly sliced
  • 1 bell pepper sliced
  • 1 cup corn kernels cooked
  • 8 taco shells
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon paprika

Instructions 

  1. Preheat the grill to medium-high heat.
  2. Brush the avocado halves with olive oil and season with salt and pepper.
  3. Grill the avocados for about 5 minutes, cut side down, until grill marks appear.
  4. In a mixing bowl, combine cherry tomatoes, red onion, bell pepper, corn, cumin, and paprika.
  5. Remove the avocados from the grill and scoop out the flesh. Slice into strips.
  6. Warm the taco shells on the grill for about 1 minute.
  7. Assemble the tacos by placing grilled avocado slices and veggie mixture into each taco shell.
  8. Serve immediately and enjoy!
