Ingredients 

Salad Ingredients

  • 2 cups Mixed Greens
  • 1 cup Cherry Tomatoes, halved
  • 1 cup Cucumber, sliced
  • 1 cup Red Bell Pepper, sliced
  • 1 cup Vegan Chicken Strips grilled
  • 1 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice
  • to taste Salt and Pepper

Instructions 

  1. 1. Preheat the grill pan over medium heat.
  2. 2. Grill the vegan chicken strips for about 3-4 minutes on each side until they are golden brown.
  3. 3. In a mixing bowl, combine mixed greens, cherry tomatoes, cucumber, and red bell pepper.
  4. 4. Add the grilled vegan chicken strips to the salad.
  5. 5. Drizzle olive oil and lemon juice over the salad. Season with salt and pepper to taste.
  6. 6. Toss everything together and serve immediately.
