Grilled Vegetable Medley
A simple and delicious vegan grilled vegetable medley.

Vegetables
- 1 large Zucchini sliced
- 1 large Bell Pepper sliced
- 1 large Red Onion sliced
- 1 cup Cherry Tomatoes halved
- 2 tablespoon Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 teaspoon Garlic Powder
Preheat the grill to medium-high heat.
In a mixing bowl, combine all the vegetables, olive oil, salt, black pepper, and garlic powder. Toss to coat evenly.
Place the vegetables on the grill. Cook for about 10-15 minutes, turning occasionally, until they are tender and slightly charred.
Remove from the grill and serve immediately.
