Ingredients 

Main Ingredients

  • 12 oz Pasta any type
  • 1 cup Cherry tomatoes halved
  • 1 cup Zucchini sliced
  • 1 cup Bell peppers sliced
  • 2 tablespoon Olive oil
  • 2 cloves Garlic minced
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black pepper to taste
  • 1 tablespoon Lemon juice freshly squeezed
  • 1 tablespoon Fresh basil chopped

Instructions 

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Preheat grill to medium-high heat.
  3. Toss cherry tomatoes, zucchini, and bell peppers with 1 tablespoon olive oil, salt, and pepper.
  4. Grill vegetables for 5-7 minutes, until tender and slightly charred.
  5. In a pan, heat remaining olive oil over medium heat. Add garlic and sauté for 1 minute.
  6. Add grilled vegetables to the pan and toss to combine.
  7. Add cooked pasta, lemon juice, and fresh basil. Toss everything together.
  8. Serve warm.
